New American Fine Dining: Peregrine Set To Take Flight

Chef Saif Rahman and artist Patrick Shanahan announce their revelatory new restaurant Peregrine – the flagship restaurant at 1000 Social at The Exchange.   A love letter to Rahman’s life traversing the globe, the menu will pay homage to Rahman’s childhood home in South Asia as well as his new home in North Carolina.

Peregrine – a reference to the powerful Peregrine Falcon and its keen sense of wandering and migration – will open in early 2025 as the flagship restaurant at The Exchange Raleigh, artfully revealing the rich cuisines, ingredients and traditions so many cultures share in a soaring dining room designed and crafted by Shanahan.

“I’m honored to share the food that has made me who I am today, that tells my life story — an American story. Cuisines from all corners of the world share so much in common, and that’s what we’re going to explore, with respect and refinement,” said Rahman about the global tapestry from which he’ll cook.

At Peregrine, Chef Rahman’s vast culinary journey will come to life and once again reveal how food connects us all.

Signature dishes will include a fragrant fish curry that’s traditional to Bengali cuisine, but one that he’ll modernize with French technique, serve tableside, and name for his grandmother, “Ode to Amina.” Another nostalgic dish of crispy lentil fritters – “Piyagi” – is a recreation of the street food snack his grandfather brought to him during Ramadan, which he’ll make his own and serve with a tamarind and black garlic chutney.

Patrick Shanahan – Raleigh native, professional film maker, and co-owner of Watts & Ward cocktail bar – has partnered with Mauer Architecture to design an ambitious 4,000-square foot restaurant unlike any other in the area with indoor seating for 100 guests.

“This meaningful project deserves to be experienced in an equally inspired space, which is why I set out to soften the design of the existing space by introducing imperfect elements such as locally sourced wood, travertine, terrazzo, and hand-plastering every inch of exposed wall with my own hands. I wanted a textural, yet modern dining room to honor Chef’s modern interpretation of these ancestral cuisines,” explained Shanahan.

“Patrick and Saif’s vision for Peregrine resonates with our ethos at The Exchange,” says Todd Saieed, owner of Dewitt Carolinas, owner of the new 40-acre mixed-use development in Midtown. “This restaurant is the focal point when you turn onto Skygarden Way; it’s fitting that your first impression will be Peregrine, setting the tone for The Exchange.”
